Potato Kielbasa Casserole

My kids love their macaroni & cheese. Unfortunately, one of them has had to give-up the gluten, which means no more bread or pasta. It’s hard for a kid to give up his macaroni & cheese! I could have bought a box of gluten-free noodles, but they are pretty expensive compared to the $1 box of plain ol’ wheat noodles.

Switching my usual mac & cheese recipe to a gluten-free one was really not as hard as I imagined it would be. I just replaced the noodles with potatoes and swapped-out the wheat flour with a mixture of rice and tapioca flours.  My kids didn’t even miss the noodles. They devoured this dinner. It’s a wonderful option for kids who love macaroni & cheese!

The first trick was finding a sauce thickener to replace the wheat flour. Equal parts rice & tapioca flour seemed like the perfect replacement for the wheat flour. The sauce cooked up perfectly. Just have the milk ready as soon as you whisk the flours into the butter. Without the milk, the flours can burn quickly.

A note on ingredients: Read the package of kielbasa to make sure it is actually gluten-free. Some packaged meats use wheat as a cheap filler.

ingredients: 

  • 4 tablespoons butter
  • 2 tablespoons white rice
  • 2 tablespoons tapioca flour
  • 1 pint milk
  • 8 ounces cheddar cheese
  • 1 pound frozed, diced potatoes
  • 1/2 pound Kilebasa, diced

On medium heat, melt butter in a saucepan. Whisk in rice flour & tapioca flour. Gradually whisk in milk and cook until thickened.

Remove from heat & crumble cheese into the pot. Stir until cheese is mostly melted.

Stir potatoes and sausage into the cheese sauce. Pour everything into a 9×13 baking pan.

Bake at 350 for 45 minutes or until the cheese is bubbly & you can’t resist the delicious smells any longer.
