Pork Chops & Veggies

This recipe is so easy, it almost doesn’t need writing. But, because it’s simple and speedy, it has become a frequent supper at our house.

Any sturdy vegetable will work here; carrots, rutabaga, cubes of winter squash, etc.

Ingredients:

  • 2 pounds pork chops
  • 1 pound green beans
  • 1 pound potatoes
  • lard
  • Lawry’s salt

Directions:

  • Preheat oven to 425.
  • Grease a half-sheet (approximately 13″ x 18″ ) pan with lard. Arrange chops on pan.
  • Melt 2 tablespoons lard in large skillet. Remove from heat, Stir potatoes and green beans into lard. Scatter veggies around chops on cookie sheet.
  • Sprinkle Lawry’s salt over all.
  • Bake 25 minutes, or until pork chops are done.
