Pork & Cheese Dip

To read the contents of our freezers, you would think I butchered Old McDonald’s entire farm. I have 3 hogs, a few turkeys, rabbits, too many chickens to count, a goat or two and a few leftovers from last year’s deer hunting. There may even be a goose or duck in there. No, I’m not a “prepper” I just like knowing that my kids won’t fear hunger. We may not be rich, but we feast like kings around here.

I had a package of ground pork bust open in the chaos, so I had to cook it up. Usually it ends up in a casserole with a dozen eggs, but even I’m getting sick of eggs!

This dip could be served as an appetizer or even supper if needed. Hey, it has all 4 food groups; fruit, vegetables, meat & dairy. Admittedly, it looks like something the cat puked up, but I promise, it tastes great!

ingredients:

  • 1 pound ground pork (unseasoned)
  • 1/2 onion, chopped finely
  • 1 clove garlic, minced
  • 12 ounces cream cheese, at room temperature
  • 1 pint diced tomatoes (don’t drain)
  • 4 ounce can green chiles (don’t drain)
  • 8 ounces frozen corn
  • 2 teaspoons chili powder
  • 1/4 teaspoon crushed red pepper
  • 1/4 teaspoon dried oregano
  • salt & pepper
  • 4 ounces cheddar cheese, shredded

In large skillet, brown pork on medium heat. Add onion and cook until softened. Stir in garlic and cook one minute longer.

Remove from heat and stir in cream cheese just until melted.

Stir in rest of the ingredients except shredded cheddar.

Pour into 2 quart baking dish.

Bake at 350 degrees for 20 minutes, or until heated through.

Sprinkle with cheese and bake 2-3 minutes longer.

Serve with sliced veggies, crackers or pretzels.
