Mrs. Rorer’s Macaroni and Cheese

Old School macaroni and cheese, meet New School gluten free noodles. 

I found this recipe for Baked Macaroni in Mrs. Rorer’s cookbook from 1886. Not only did it taste amazing, it was super easy (no sauce making required). I had to bake Mrs’ Rorer’s macaroni in Pyrex, because she loved the stuff almost as much as I do. “Mrs. Rorer … travelled the country preaching the virtues of Pyrex.”

The only change I made, out of necessity, was to use gluten free noodles. Mueller’s corn & rice noodles were on sale this week, so I decided to give them a try. What could it hurt, right? Wow, they were totally worth taking a chance. As with any recipe, you know if the gluten-eaters like it, it’s good. It tastes 100% like traditional, homestyle, comfort food, macaroni and cheese. Nobody will ever guess the noodles were gluten free! I plan to buy these again & again, even when they’re not on sale.

 This recipe will fill a 1 quart Pyrex baking dish. I doubled the recipe and used a 2 quart dish. mac & cheese recipe

ingredients:

  • ¼ pound macaroni
  • ¼ pound grated cheese
  • ½ cup cream
  • 1 tablespoon butter
  • salt and pepper

The recipe makes it sound like all pasta in 1886 was spaghetti. I have no idea. That’s my guess as to why the directions state to “Break the macaroni in convenient lengths.”

directions:

  • Boil macaroni in salted water, following package directions. Drain noodles.
  • Layer half the macaroni in bottom of greased casserole dish, then a layer of cheese, then a sprinkling of salt and pepper.
  • Repeat.
  • Cut the butter into small bits. Distribute them evenly over the top.
  • Pour on cream.
  • Bake at 375 degrees 15-20 minutes, or until golden brown.
  • Serve in the dish in which it was baked.
