Herb and Bacon Roasted Potatoes

2 pounds small, red potatoes, scrubbed & cut in half

2 tablespoons melted bacon grease

1 teaspoon fresh rosemary, finely chopped

2 tablespoons chives, chopped

herb bouquet

3 strips bacon, cut in half

Arrange potatoes in 8×8 baking dish. Pour bacon grease over & stir to cover potatoes. Sprinkle with herbs & stir to coat. Lay bacon slices on top.

Cover and bake at 350 degrees for 45 minutes. Uncover and cook 30 minutes more or until potatoes are done.
