Ham & Cabbage

ham cabbage layers School starts next week. How is that even possible???!!! Things get a little crazy around here once the kids are back in school and my slow cooker works overtime with the rest of us. I have 4 slow cookers & Crock Pots (Had 5, broke the big one. It’s on my “to-do list”). Today we had one cooking rabbit and another cooking ham with cabbage. Our rabbit recipes usually read “Rinse rabbit. Toss in slow cooker. Drizzle with olive oil and spices. Toss in scrubbed veggies and a bit of water. Cook low & slow. The end.” Of course this ham steak & cabbage recipe is just as simple, I just wanted to show off my new toy.

I recently bought this 9×13 Crock-Pot Casserole Crock and I love, love, love it! It has a simple dial, temperature control. I do not like programmable, computerized, complicated appliances. It’s big enough to hold enough food for all 6 of us. The lid “locks” on with a rubber seal, so I can haul it around to potlucks without needing to scrub the floor mats afterward. Bonus, I bought the black & chrome CrockPot because it reminds me of a brand new Cadillac; also on my “to-do” list 😉

 

ingredients:

  • 4-6 ham steaks (each around one pound)
  • 1 small-medium cabbage
  • 1 onion
  • lard or bacon fat
  • salt & pepper
  • 1 pint chicken broth or water

directions:

  • Trim fat from ham steaks. Save the fat for another use; that’s good stuff!
  • Thinly slice the onion. 
  • Cut the core from cabbage and cut into thick slices.

  • In large skillet on medium heat, brown onion slices in lard until softened. Pour onions into bottom of slow cooker. 
  • Salt and pepper both sides of the cabbage slices. In the same skillet, adding more lard as needed, cook half of the cabbage slices until lightly browned. Arrange cabbage slices over top of the onion.
  • Brown 2 ham sliced in lard (again, adding more as needed). Lay ham on top of cabbage.
  • Cook the rest of the cabbage and ham, layering them in the slow cooker.

  • Pour broth or water over all. 
  • Cover and cook on low 6-8 hours, or until ham is soft enough that you can pull it to pieces with your fingers.

I put the leftovers in the refrigerator and when I went back for more, the bowl was empty. Still in the refrigerator. This is how things work around here. I suppose I should be happy they liked the meal.
