Gluten Free and Dairy Free Scalloped Potatoes

ingredients:

  • 4 pounds potatoes
  • 2 cups cooked & chopped ham (a great way to use-up leftovers)
  • 6 tablespoons lard
  • 1 onion chopped
  • 4 tablespoons white rice flour
  • 2 tablespoons cornstarch
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • ¼ teaspoon paprika
  • 1 quart chicken or ham broth

Preheat an oven to 350 degrees.

Wash and peel potatoes, slice thinly. Layer half the potatoes in 9×13 baking dish. (Half the recipe will fill a 2 quart baking dish.) Scatter half ham on top.

In a small bowl, stir together rice flour, cornstarch and seasoning. In medium saucepan, melt lard over low heat. Toss in onion and cook until onions are softened. Stir in flour mix. Cook over medium heat, stirring constantly, until mixture is smooth and bubbly.

Slowly whisk in broth. Heat just to boiling, stirring constantly; boil gently until sauce is slightly thickened.

Pour half of sauce on top of potatoes. Add rest of potatoes, ham and then sauce.

Cover with foil, bake 30 minutes. Remove foil and bake 45-60 minutes longer, until potatoes are done.
