Fire Free S’mores

S'MORES BARS

Ok, I’m currently on a s’mores kick. No idea why, blame it on the moon. We’ve made s’mores in the fondue pot, s’mores over the bonfire, toasted marshmallows over the electric stovetop, and these super simple s’mores bars.

I’ve made these bars about 10 times, with both Kinnikinnick S’moreables and Schar Honeygrams. The Kinnikinnick are a bit thicker and sturdier than Schar, making them better for s’mores, but for smashing into bits, both brands work equally well.

My son said he could eat these everyday. Me too son. And that’s why I’ve gained 20 pounds since starting this blog.

ingredients:

  • 1/4 cup butter
  • 10 ounce bag marshmallows
  • 4 cups chocolate, crisp rice cereal (We like Cocoa Pebbles)
  • 5-6 ounces gluten-free “graham” crackers 

Melt butter and marshmallows in a large saucepan on low heat.

As marshmallows are melting, put grahams in a zip-top bag and bash with a wooden rolling pin. Don’t turn them totally to crumbs, keep them chunky.

Once marshmallows are melted, stir in grahams and cereal.

Scoop into buttered 9×13 pan.

Let rest just a minute or two until cool enough to smoosh down with your fingers. Save the butter wrapper, the buttered side is makes easy work of the smooshing.

Cool to room temperature. Cut into squares and hide them in your glove box. Oh, I mean, cut into squares and pack them in the kids’ lunchboxes.
