Egg Casserole with Salad Greens

  • 2 cups assorted salad greens
  • 2 tablespoons butter
  • 1/4 cup chopped onion
  • 1/4 cup chopped bell pepper
  • salt, pepper, paprika
  • 8 eggs
  • 1/4 cup milk
  • 4 ounces mozzarella, crumbled

Grease 9×13 Pyrex baking dish.

Layer greens on bottom.

Saute’ onion and bell pepper in butter until softened. Season with salt, pepper and paprika.

Layer pepper & onion over top of greens.

Sprinkle cheese over veggies.

In a 4 cup Pyrex measuring glass, whisk eggs and milk together. Pour into baking dish.

Bake at 350 for 30 minutes.
