Crustless Quiche for 2 or 3

Crustless Quiche Feature My hens have been working overtime. I probably have hundreds of eggs in my refrigerator right now. I’ve been cooking them every way I can think of. We’ve had scrambled eggs, fried eggs, egg salad and breakfast casseroles. I’ve hard-boiled dozens & dozens of eggs for the pigs & dog. I’m still drowning in eggs!

Quiche is great, but there’s always the extra step of mixing and rolling out a crust. This recipe skips the crust altogether, making it naturally gluten free.

I’ve made this in both 1 pint and 1 1/2 pint, Pyrex casserole dishes. The 1 pint dish is great for a small dinner for 2. The 1 1/2 pint would be a great meal for one plus leftovers for lunch or supper.

Ingredients for 1 pint quiche:

  • 1/3 cup diced ham
  • 1 cup spinach, torn to pieces
  • 1/4 cup shredded mozzarella
  • 4 eggs
  • 4 tablespoons milk
  • salt, pepper, paprika, garlic powder

Ingredients for 1 1/2 pint quiche:

  • 1/2 cup diced ham
  • 1 1/2 cup spinach, torn to pieces
  • 1/3 cup shredded mozzarella
  • 6 eggs
  • 6 tablespoons milk
  • salt, pepper, paprika, garlic powder

Instructions:

Preheat oven to 325 degrees.

quiche unbaked Sprinkle ham into the bottom of greased casserole. Layer spinach on top, then cheese.

Season each with a dash of the salt, pepper, paprika and garlic powder.

pyrex measure egg squ Break eggs into Pyrex measuring cup. Whisk eggs together with milk.

quiche unbaked egg squ Pour eggs into casserole.

Bake 35-40 minutes for one pint quiche and 45-50 minutes for 1 1/2 pint.
