Keep on A Truckin’ Cafe Pan Gravy

ingredients:

  • roast chicken pan drippings
  • 4-6 tablespoons gluten free gravy flour *
  • 1-2 cups milk
  • salt & pepper 

* When I make gravy, I use one part cornstarch to 2 parts white rice flour. Just stir them together in a small bowl & measure out as you would regular flour.

When chicken is done roasting, remove it from the pan & set on a plate to rest. While it’s resting, make the pan gravy.

On medium heat, whisk flour into roast chicken pan drippings. You want equal parts pan drippings to flour. You can measure if you need to. I kinda just guess. Start with one tablespoon flour & stir until it soaks up some of the drippings. Add more flour, 1 tablespoon at a time, until the drippings are mopped up with the flour.

For every 2 tablespoons of flour you used, stir in 1 cup milk.

Keep stirring, while it cooks until thickened.

Sprinkle in salt & pepper. Or Lawry’s salt. We love Lawry’s salt.
