Bacon & Egg Salad

My hens have been working overtime and my refrigerator is full of eggs, so I have been scrambling (yep) trying to find ways to use them up. I keep a huge bowl of hard-boiled eggs in the fridge. They make a great snack with a little Lawry’s salt. When I get sick of that, I like my egg salad on toast. I can mix up a big batch, store it in the refrigerator & have no excuses when I don’t have time to cook a “real” meal. Who needs a hefty dinner in the summertime when a simple little egg is healthy, tasty, and filling?

  • 6 hard-boiled eggs, cooled & peeled
  • 3 slices bacon, cooked, cooled & chopped
  • 3 heaping tablespoons mayonnaise
  • 1 heaping tablespoon mustard
  • 1/4 teaspoon dry dillweed
  • a dash each of salt, pepper & paprika

In a medium size mixing bowl, mash eggs with a potato masher. Stir in rest of ingredients, saving a few bacon pieces for the top if desired.
