Asparagus with Cheese

It’s finally springtime in Michigan! The asparagus & rhubarb are popping up like wildflowers. When we bought this house, in November in Michigan, there wasn’t much to see. In the spring, as the grass started growing and we started working in the yard, we discovered all sorts of hidden treasures. A trash pile in the backyard, beautiful lilac bushes, daffodils, and peonies. Under some 3′ tall weeds, we found very old, but still well-producing grape vines. Probably the best treasure was unearthed by the chickens – a tiny asparagus patch right outside the back door. It looked like weeds to me, but leave it to those little scratch & sniffers to find veggies where you would least expect them. Turns out chickens are better for more than just eggs!

Now that I know where it is, I know where to look every spring for more asparagus. Once it gets going, you can’t kill this stuff if you tried. It’s hardy as hell. Good news for me, I have a brown thumb. I’ve cooked asparagus every which way, but this is by far our favorite – smothered in cheese. The recipe is in an old American Woman’s cookbook from 1940 that my grandma gave me. It was her sisters and it has some of the best recipes in it!

The recipe calls for 1 bunch asparagus. I’m not sure how much that is. I collected just over 12 ounces from our little garden, but I’m sure you could use up to one pound and it would still be perfect.

This recipe is quick and easy. I picked the asparagus & had it on the table in about half an hour.

  • 1 bunch asparagus
  • ½ cup grated cheese
  • 1 tablespoon butter
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • I added a dash of paprika

Cut (or snap) asparagus in pieces and boil in salted water for ten minutes, then place it in a baking dish.

Sprinkle with the grated cheese and seasoning, and add the butter in small pieces.

Bake in a moderate oven (350-400 F) for 10 minutes.
