Asparagus Salad

Asparagus Salad with Egg

This tasty spring salad needs no dressing, not even Ranch!

  • 1 quart fresh greens
  • 2 tablespoons butter
  • 1 clove garlic
  • 1/2 pound asparagus
  • 1 tablespoon lemon juice
  • 4 ounces crumbled mozzarella
  • 4 hard boiled eggs

Snap asparagus into pieces, cook in butter with garlic 5 minutes.

Remove from heat. Season with salt, pepper and paprika. Cool 10 minutes. Sprinkle with lemon juice.

Toss with greens and cheese in a large salad bowl.

Top with egg slices.

Refrigerate leftovers.
