Apple Bread Pudding

It’s common knowledge, at least among us gluten-free moms, that gluten-free bread is expensive; at least compared to its wheat-filled cousin. I usually buy Udi’s for my kids’ sandwiches. When it’s toasted, it makes great sandwiches. It holds-up to bacon, lettuce & tomatoes like a champ. Unfortunately, it’s sometimes full of holes so big the jelly oozes out all over your lunchbox. Then, you get that itty bitty piece of bread at the end that’s too small for any genuine purpose. 

I hate wasting good money on anything, ask my kids. So, I save all of my “unusable” pieces of gluten free bread. I put them right back in an Udi’s bag and keep them in the freezer until I need them. They can be toasted and crumbled for breadcrumbs or croutons. Cube them for stuffing or bread pudding.

When I found this traditional recipe for Apple Bread Pudding, I knew it would be a great use of those little bread pieces. I had a few pieces of Udi’s raisin bread, so I threw them in too. I think bread pudding is usually a dessert, but I’ve been eating it for breakfast. It makes a tasty dessert for Thanksgiving dinner or a cozy breakfast on Christmas morning.

The original recipe uses a 1 1/2 quart dish, but I needed a 2 quart bowl to pack it all in.

ingredients:

  • 2 tablespoons butter, melted
  • 4 cups bread cubes
  • 4 medium apples, cored, peeled & chopped
  • ½ cup chopped walnuts
  • ¼ cup raisins
  • 2 cups milk
  • 4 eggs
  • ¼ cup honey
  • ¼ cup brown sugar
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon allspice

directions:

Pour butter over bread cubes; mix well. Add apples, walnuts, and raisins; turn into a buttered 2 quart baking dish.

In a medium bowl, beat together milk, eggs, honey, brown sugar, and spices. Pour over bread.

Place baking dish in pan with one inch of hot water.

Bake in 325 degree oven for one hour and 15 minutes, or until tip of knife inserted in center comes out clean.

Serve warm or chilled. Makes 6-8 servings.
