What a great idea! Pie by the yard. Add this to my list of “Wish I had thought of it”. If your gluten-free crust crumbles, just squish it back together and keep moving along. I have yet to meet a person that will turn down a pie just because the crust is a little “rustic.” GET THE RECIPE

I love coconut cream pie. LOVE. I also love my stash of Mason jars and these little pies look so cute in them! Plus, if anyone makes excuses as to why that can’t come to Christmas dinner, you can bribe them with “Everyone who shows up gets their very own pie!” Although the recipe is no-bake, it’s NOT no cook, so plan ahead. The custard gets cooked on the stovetop and then chilled. Try Schar gluten free shortbread cookies for the crust. GET THE RECIPE

Blueberries are not just tasty, they’re extremely healthy. Plus, and I may have mentioned this like a million times, but I have a bad memory so I’m posting again, “Michigan is the number one state in highbush blueberry production“. Eggnog in a cheesecake? Gimme! I use Kinnkinnick graham crackers for all my recipes, even s’mores. They’re the best gluten-free graham cracker I have found yet. Be careful which brand of eggnog you buy, some are loaded with bizarre fillers & thickeners. GET THE RECIPE

OK, you know I like booze in my pies. And cupcakes. And pork chops. Don’t let the idea of whiskey in a pie drive you away. Any pure vanilla extract contains alcohol. Plus, if you compare the price of a bottle of whiskey to a bottle of vanilla extract, you will see why I go for the whiskey every time. The Biscoff spread does contain wheat because it has crushed-up cookies in it. Use your favorite nut butter and crush-up a few gluten free cookies. Good to go. GET THE RECIPE
