I LOVE using my cast iron skillets – and combined with a fun name – of course this awesome recipe made the list! *Shakshuka is a traditional Middle Eastern dish, possibly of Tunisian origin. This recipe takes the dish south of the border into Mexican cuisine, so it’s not true shakshuka…but Beth says “it’s too fun to say ‘shakshuka’, so the name remains.” And I agree, say it with me now SHAKSHUKA! GET THE RECIPE

Much like Alison, I have a lot – a LOT – of Mason jars and I’m always delighted when I find a fun new way to use them, so I couldn’t resist this delicious recipe. Bonus, it’s a no-cook recipe! Cranberries are a holiday tradition in just about every family, but canned cranberries just don’t do it for me – at all. Now, give me fresh cranberries AND a cake – for breakfast? Yes, please! Just swap out the regular flour for your favorite gluten free option and you’ll have a breakfast sure to fly off the plate! *I mix my own gluten free flours, but Glutino’s all purpose flour mix works well and contains no xanthan gum.  GET THE RECIPE

What more could we ask for on a hectic morning? Prep the ingredients, pop them in the oven, let the kids tear into their Christmas presents and when the dust settles, breakfast will be waiting! I have made many variations of these breakfast muffins. They are a great way to use up the little bits of chopped veggies in the fridge. I must admit though, I skipped cooking the onions & peppers. Cooking them first will add flavor, so do saute’ them if you can. I keep large bags of chopped peppers & onions in the freezer. I just broke off a chunk & dropped it into each muffin tin, then poured the egg mixture on top. My kids were fighting over who got more than the next guy, so I guess all’s well that ends well. GET THE RECIPE

Breakfast quesadillas make a quick & hearty breakfast to give you all the energy you will need to get through the holidays. Lots of step-by-step photos make it a great recipe for beginner cooks. This casserole is a great time saver for crazy mornings. Prepare it the night before and pop it in the oven on Christmas morning. Try Udi’s Raisin Bread to make it gluten free, I think it works nicely here. If you use a glass baking dish, let it rest at room temperature 20-30 minutes before baking. It could crack if you pull it straight from the refrigerator to hot oven. GET THE RECIPE

Since venturing into this gluten-free wilderness, we have missed a lot of our favorite pre-GF foods. The “other” creamy, cocoa cereal was very popular in our house. Easy to make, tasty, kids loved it, etc. This recipe makes a wonderful, creamy, chocolatey breakfast that the kids, and their parents, can love again. GET THE RECIPE

I make salsa all summer long from fresh, farmers’ market veggies. Salsa seems to be our vegetable of choice when fresh veggies are out of season. These little sausage balls with salsa make a quick, healthy, finger food. Kids can eat with one hand and tear into their Christmas gifts with the other hand. No time wasted. GET THE RECIPE

You had me at chocolate. While she suggests this as a dessert, I’m totally cool with chocolate for breakfast. I’ve used regular, gluten free sandwich bread for many breakfast casseroles and it works well. Although, I just discovered Udis’ makes a French baguette, so I may try it next time. And if you’re dairy free, try the coconut oil in place of butter. GET THE RECIPE
